Departmental Store worth benchmarking

I was looking at the design of PackNsave departmental store in Hamilton . The distance between the aisles is about 10 feet. The distance between the major aisle is about 25 feet. There is a Taste station where customers are offered new cooked item to taste. This we can adopt. Further there is now self help pay system where you can pay yourself without going into cashier track.
 Interesting Sign in the store: Cutting Food Cost is our  job #1. Can we use it
